  2. Take 3/4 of th Bunch Mint leaves (For the Chutney).
  3. Prepare 6 of Green Chilies (Divided).
  4. Get 6 of Potatoes Medium-Large.
  5. Get 2 of Onions Medium (Finely chopped).
  6. Take 1 Inch of Ginger (Finely chopped).
  7. Get 1 Bunch of Green Onions (Chopped) White & the light green parts only.
  8. You need 1/4 of th Bunch of each Coriander greens & Mint (To be added to the Potatoes).
  9. Provide 1 Tsp of Cumin seeds.
  10. You need 1 Tsp of Mustard seeds.
  11. Use 1 Tsp of Deghi Mirch/Red Chilli Powder.
  12. Get 1 Tsp of Garam Masala Powder.
  13. Take 1 Tsp of Amchur/Dry Mango Powder.
  14. Take 1/2 of Lemon.
  15. Provide of As per taste Salt.
  16. Provide 2 Tbsp of Oil.

  1. Boil the Potatoes in a Pot for 15 minutes or pressure cook on high for 3 minutes. Let the pressure release on it's own..

  5. Heat oil in a nonstick skillet or wok..
  6. Tip in the Jeera & Mustard seeds. Let them crackle..
  7. Sauté the Onion & Ginger until golden..
  8. Add the Potatoes..
  9. Cook for 5 minutes on high heat..
  10. Add 4 Tablespoons of the Green Chutney followed by the Salt, Degi Mirch, Garam Masala & Amchur..
  11. Stir well. Cook for 2 minutes..
  12. Add the Green Onions, Green Chilies, Coriander greens & Mint..
  13. Squeeze the Lemon. Stir..
  14. Serve hot with Roti/Parantha/Poori..
